tilapia fillets, broccoli cheese soup, and gourmet style cupcakes

hi everyone! sorry my "weekend recipe" post is going up thursday. i have not felt 100% this week and even debated being able to get through my post right now. I think school starting has finally hit me and all i want to do is sleep. i have sewn a few things these last few days but have not taken proper pictures just yet.

so this weekend i cooked up tilapia fillets on saturday and broccoli cheese soup on sunday

i will start with sunday's broccoli cheese soup...
oh man i sure love this stuff!

 For Christmas I had received this Cugino's mix and all you need to add is milk, water, and broccoli.
 it really is super easy! just wisk the milk into the water, add the package and wisk until no clumps. add the broccoli and let sit and low boil  for 20 mins.
 on to the tilapia fillets...
i made all 7 fillets that came in the bag with lemon juice, butter, oregano, and garlic
 melt your butter. just put 2 tablespoons in a glass dish an dpop in the  microwave for 10 secs
 rinse off your fillets and pat dry with a paper towel. place in baking dish. next cover with 6 tablespoons lemon juice and 2 tablespoons melted butter. then sprinkle you 2 cloves of chopped garlic as evenly as possible.
shake over you 2 teaspoons of oregano over all the fillets and just a pinch of pepper
 bake in the oven at 350 for 10 mins or until fish is flaky 
 i served my tilapia with a vegetable medley from green giant steamers line and some peanut sauce my uncle made.

now for this week's dessert
white cake mix + key lime pie filling + lemon frosting = gourmet style cupcakes 
 i baked up 24 cupcakes (and 14 minis to use every last bit of batter)
i used my cupcake corer to remove a chunk from the center of each one
 i then filled each one with key lime pie filling
 arent they looking tasty already!
 then smother them with lemon frosting and toss on some sprinkles
aww man these were the BEST!

things i learned this week:
fish cooks super quick
beware of soup boiling over... figure out when to cover and when not to
play with flavors and ingredients, creativity can happen in the kitchen

i really need to make myself a cute apron! not sure why i havent done so yet... i am off the hook fromo cooking sunday since it will be bbq for the super bowl but i plan on making a taco casserole for saturday. i need to get better at figuring out side dishes too...
